Pie Crusts

I have watched chefs on the internet make pie crusts. I have written down about 3 recipes for pie crusts and follow them to the letter. My pie crusts taste wonderful and are very flaky. My problem is trying to roll them out. The edges of my dough are not nice and smooth, they are cracked - unlike those I have seen in videos (on how to make a pie crust).
