Carrots in Soup

Carrots add lots of color and nutrients to soups – not to mention the great flavor they add too. This is a good time of year to pick up some fresh carrots at your farmers market and what better way to use them than in homemade soups?
We taught Blake how to use a potato peeler to peel the carrots.

Then we made Italian Chicken Noodle Soup for lunch. It tasted great on a cool day and it didn't take very long to make.
