Yummy wintery goodness, even though here the temperature is in the upper 70s (that's almost 30 degrees Celsius, for the Europeans), so it doesn't feel like winter at all, let alone Christmas.
But the soup was good and warm and delicate and I used homemade chicken jus instead of broth, and i gave it an extra kick with just a little drizzle of truffle oil.
Very loosely based on this recipe.

Nothing beats a bowl of hot soup on a chilly grey day. This is my modification of the low gi soup recipe that Mum sent me ages ago. You're supposed to have a bowl a day and somedays I don't but I try to. Plenty of vegies and I don't feel guilty for having none or little with dinner.
This batch made about 1.5L of soup and in it went:
0.5 cauliflower
1 red capsicum
2 small zucchini
3 carrots
bunch of pak choy

I've made baked fish with stuffing since I was about 10 years old. The recipe was from a Ladybird cookbook for kids. The main difference with that magazine was that the binder was melted butter, not egg, and the stuffing was piled on a fillet of fish, and drizzled with more butter to crisp it up!

Braised Fennel
Fennel is one of those vegetables that until recently, I didn't really cook or eat that often. It seemed to me to be kind of precious, something unusual, not an everyday veggie like broccoli or green beans. At first the only thing I would do with it is slice it thin into a salad. (So good with Parmesan.) Then I discovered roasting it. With some balsamic? Yum. And then I found out how good it was in a tomato sauce with seafood.

We had almost a full Thanksgiving dinner last Wednesday and leftovers Thursday and Friday. I was in a cooking kind of mood and saw this recipe from Nigella Lawson's tv show. It seemed easy enough so I gave it a shot.
It's an orange flavoured cake base, cranberry filling, and an almond crumble-like topping.
All I can say is.... it is VERY good!

2 years ago we moved from LA to Denver. Our favorite cake is angle food. In LA I never had a problem with the Betty Crocker angle food cake mix. Since moving to Denver I have tried 7 cakes ...all unsuccessfully. I have an accurate oven temperature, I use the lower oven rack, I follow the high altitude directions (fresh cornstarch and mixing duration), and I make sure I have an absolutely clean angle food cake pan (not nonstick) and mixer. L's Tummy Update
I just realized that I've posted two recipes but no update on L's endoscopy! Please chock this up to the holidays and life with three kids. Whew.The endoscopy went great. I can't say enough good things about the GI's at Cook Children's in Fort Worth, Texas. Since we were coming in from out of state, they managed to get him into see the GI on day 1 and then have the endoscopy scheduled for the next day. I was in a cooking kind of mood and saw this recipe from Nigella Lawson's tv show. It seemed easy enough so I gave it a shot.
It's an orange flavoured cake base, cranberry filling, and an almond crumble-like topping.
All I can say is.... it is VERY good!
