Make Reuben Sandwiches with Leftover Corned Beef

Jack and I always look forward to a boiled dinner with corned beef, potatoes, carrots and cabbage for dinner on St. Patrick's Day. I start it in a slow cooker before I leave for work in the morning, and when we walk in the door after work, our dinner is ready to eat.

No matter how small the corned beef, we always have leftovers since there is just the two of us at home. For dinner tonight, we are looking forward to Reuben Sandwiches - one of the the best ways to use up your lefto
